Then, gently fluff it with a fork and set it aside.<\/li>\n\n\n\n<li>Heat oil in a pan over medium heat. Add mustard seeds and let them splutter. Then add cumin seeds and saut\u00e9 for a few seconds until they start to sizzle.<\/li>\n\n\n\n<li>Add chopped onions and saut\u00e9 until they turn translucent.<\/li>\n\n\n\n<li>Add chopped green chili, curry leaves, and turmeric powder. Mix well and saut\u00e9 for another minute.<\/li>\n\n\n\n<li>Now, add chopped tomatoes and cook until they soften slightly.<\/li>\n\n\n\n<li>Add the rinsed and softened poha to the pan. Mix everything gently until well combined.<\/li>\n\n\n\n<li>Add salt to taste and mix well. If using roasted peanuts, add them at this stage and mix.<\/li>\n\n\n\n<li>Cover the pan with a lid and let the poha cook for about 2-3 minutes on low heat. This helps the flavors to meld together.<\/li>\n\n\n\n<li>Once done, turn off the heat. Garnish with fresh coriander leaves and serve hot with lemon wedges on the side.<\/li>\n<\/ol>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Coconut Chutney:<\/strong><\/h2>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Ingredients:<\/strong><\/h2>\n\n\n\n<ul>\n<li>1 cup grated coconut<\/li>\n\n\n\n<li>2-3 green chilies<\/li>\n\n\n\n<li>Small piece of ginger<\/li>\n\n\n\n<li>2 tablespoons roasted chana dal (split roasted chickpeas)<\/li>\n\n\n\n<li>A handful of fresh coriander leaves<\/li>\n\n\n\n<li>Salt to taste<\/li>\n\n\n\n<li>Water as needed<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Instructions:<\/strong><\/h2>\n\n\n\n<ol>\n<li>In a blender or food processor, combine grated coconut, green chilies, ginger, roasted chana dal, fresh coriander leaves, and salt.<\/li>\n\n\n\n<li>Add a little water and blend until you get a smooth and thick chutney consistency. Add more water if necessary to adjust the consistency.<\/li>\n\n\n\n<li>Transfer the chutney to a serving bowl.<\/li>\n<\/ol>\n\n\n\n<p><strong>Serve the Poha Upma hot with the Coconut Chutney on the side.
