Discard the solids and keep the tamarind extract aside.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Prepare Spice Mix:<\/strong><\/li>\n<\/ol>\n\n\n\n<ul>\n<li>In a pan, dry roast cumin seeds, black peppercorns, and dry red chilies until fragrant.<\/li>\n\n\n\n<li>Grind the roasted spices into a fine powder using a spice grinder or mortar and pestle. Keep aside.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Make Rasam:<\/strong><\/li>\n<\/ol>\n\n\n\n<ul>\n<li>Heat ghee or oil in a pan. Add mustard seeds and let them splutter.<\/li>\n\n\n\n<li>Add fenugreek seeds, crushed garlic, and curry leaves. Saut\u00e9 for a minute.<\/li>\n\n\n\n<li>Add chopped tomatoes and cook until they turn mushy.<\/li>\n\n\n\n<li>Now, add turmeric powder, chopped beetle leaves, and tamarind extract. Mix well.<\/li>\n\n\n\n<li>Add salt to taste and the ground spice powder. Mix thoroughly.<\/li>\n\n\n\n<li>Let the rasam simmer for about 5-7 minutes on low heat, allowing all the flavors to blend together.<\/li>\n\n\n\n<li>Adjust the consistency of the rasam by adding water if needed. It should be slightly thin but not watery.<\/li>\n\n\n\n<li>Once done, turn off the heat.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Tempering:<\/strong><\/li>\n<\/ol>\n\n\n\n<ul>\n<li>In a separate small pan, heat a little ghee or oil.<\/li>\n\n\n\n<li>Add mustard seeds and let them splutter.<\/li>\n\n\n\n<li>Add a pinch of asafoetida (hing) and curry leaves.
