Extract the pulp and set aside.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Cooking the Eggplants<\/strong>:<\/li>\n<\/ol>\n\n\n\n<ul>\n<li>Heat 2 tablespoons of oil in a large pan over medium heat.<\/li>\n\n\n\n<li>Add the quartered eggplants and saut\u00e9 until they start to turn golden brown. Remove and set aside.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Making the Base<\/strong>:<\/li>\n<\/ol>\n\n\n\n<ul>\n<li>In the same pan, add the remaining tablespoon of oil.<\/li>\n\n\n\n<li>Add mustard seeds and let them splutter. Then add fenugreek seeds and saut\u00e9 until they turn golden.<\/li>\n\n\n\n<li>Add asafoetida and curry leaves, stirring briefly.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Saut\u00e9ing the Aromatics<\/strong>:<\/li>\n<\/ol>\n\n\n\n<ul>\n<li>Add finely chopped onions and saut\u00e9 until they turn golden brown.<\/li>\n\n\n\n<li>Add minced garlic and ginger, saut\u00e9 for another minute until fragrant.<\/li>\n\n\n\n<li>Add the slit green chilies and chopped tomatoes, cook until the tomatoes are soft and mushy.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Spicing it Up<\/strong>:<\/li>\n<\/ol>\n\n\n\n<ul>\n<li>Add turmeric powder, red chili powder, coriander powder, and cumin powder.
