Extract the juice and set it aside.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Cook the Kuzhambu<\/strong>:<\/li>\n<\/ol>\n\n\n\n<ul>\n<li>Heat oil in a pan. Add mustard seeds and let them splutter.<\/li>\n\n\n\n<li>Add curry leaves and chopped onions. Saut\u00e9 until the onions become translucent.<\/li>\n\n\n\n<li>Add the crushed garlic and saut\u00e9 for a minute until fragrant.<\/li>\n\n\n\n<li>Add chopped tomatoes and cook until they turn soft.<\/li>\n\n\n\n<li>Add the chopped avarakai and saut\u00e9 for a few minutes.<\/li>\n\n\n\n<li>Stir in turmeric powder and sambar powder. Mix well.<\/li>\n\n\n\n<li>Pour in the tamarind water and add salt. Adjust the consistency by adding water as needed.<\/li>\n\n\n\n<li>Let it simmer on low heat for about 15-20 minutes or until the avarakai is cooked through and the flavors meld together.<\/li>\n<\/ul>\n\n\n\n<ol>\n<li><strong>Serve<\/strong>:<\/li>\n<\/ol>\n\n\n\n<ul>\n<li>Garnish with fresh coriander if desired.
