Lady\u2019s Finger (Okra) Kara Kuzhambu<\/strong><\/h2>\n\n\n\n<p><strong>Ingredients:<\/strong> (serves 3\u20134)<\/p>\n\n\n\n<ul>\n<li>Lady\u2019s finger \/ Okra \u2013 250 g, chopped<\/li>\n\n\n\n<li>Tamarind \u2013 lemon-sized ball, soaked in warm water<\/li>\n\n\n\n<li>Onion \u2013 1 medium, finely chopped<\/li>\n\n\n\n<li>Tomato \u2013 1 medium, chopped<\/li>\n\n\n\n<li>Green chilies \u2013 2, slit<\/li>\n\n\n\n<li>Garlic \u2013 3\u20134 cloves, chopped (optional)<\/li>\n\n\n\n<li>Curry leaves \u2013 1 sprig<\/li>\n\n\n\n<li>Oil \u2013 2 tbsp<\/li>\n\n\n\n<li>Salt \u2013 to taste<\/li>\n\n\n\n<li>Water \u2013 2\u20133 cups<\/li>\n<\/ul>\n\n\n\n<p><strong>Spices &amp; Powder:<\/strong><\/p>\n\n\n\n<ul>\n<li>Turmeric powder \u2013 \u00bd tsp<\/li>\n\n\n\n<li>Red chili powder \u2013 1 tsp<\/li>\n\n\n\n<li>Coriander powder \u2013 1 tsp<\/li>\n\n\n\n<li>Sambar powder \/ Kara Kuzhambu powder \u2013 2 tsp<\/li>\n<\/ul>\n\n\n\n<p><strong>For Tempering:<\/strong><\/p>\n\n\n\n<ul>\n<li>Mustard seeds \u2013 \u00bd tsp<\/li>\n\n\n\n<li>Fenugreek seeds \u2013 \u00bc tsp<\/li>\n\n\n\n<li>Dried red chili \u2013 1<\/li>\n\n\n\n<li>Asafoetida (hing) \u2013 a pinch<\/li>\n<\/ul>\n\n\n\n<p><strong>Method:<\/strong><\/p>\n\n\n\n<ol>\n<li>Soak tamarind in warm water for 15\u201320 mins, extract juice, discard fibers.<\/li>\n\n\n\n<li>Heat oil in a pan, add mustard seeds, fenugreek seeds, dried chili, and hing.<\/li>\n\n\n\n<li>Add curry leaves, garlic, and onions. Saut\u00e9 till onions are soft.<\/li>\n\n\n\n<li>Add tomatoes, green chilies, turmeric, red chili, coriander powder, and sambar powder. Cook till oil separates.<\/li>\n\n\n\n<li>Add okra, mix gently, and cook for 3\u20134 mins.<\/li>\n\n\n\n<li>Pour tamarind extract, add salt, and water as needed.<\/li>\n\n\n\n<li>Simmer for 15\u201320 mins until okra is tender and flavors blend.<\/li>\n\n\n\n<li>Serve hot with steamed rice.<\/li>\n<\/ol>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>2.
