Ingredients:
- 1 cup black rice
- 1/2 cup urad dal (split black gram)
- 1/2 teaspoon fenugreek seeds
- Water (for soaking)
- Salt (to taste)
- Oil or ghee (for cooking)
Instructions:
- Soaking the Ingredients:
- Rinse the black rice and urad dal separately under running water.
- In two separate bowls, soak the black rice and urad dal along with fenugreek seeds in enough water. Let them soak for at least 6 hours or overnight.
- Preparing the Batter:
- After soaking, drain the water from both the black rice and urad dal.
- In a blender or grinder, grind the soaked black rice and urad dal separately to a smooth paste. You may need to add a little water to achieve the desired consistency.
- Mix both the ground pastes together in a large bowl.
- Add salt to taste and mix well.
- Cover the bowl and let the batter ferment for about 8-10 hours or overnight in a warm place. The fermentation process helps in making the dosas soft and fluffy.
- Making the Dosa:
- After fermentation, the batter will be slightly fluffy and bubbly.
- Heat a non-stick or cast-iron skillet over medium heat.
- Once the skillet is hot, pour a ladleful of the dosa batter onto the center of the skillet.
- Using the back of the ladle, spread the batter in a circular motion to form a thin dosa.
- Drizzle a little oil or ghee around the edges of the dosa.
- Cook the dosa for 2-3 minutes or until the edges start to lift and the bottom turns golden brown.
- Flip the dosa using a spatula and cook for another 1-2 minutes on the other side.
- Once both sides are cooked to your liking, remove the dosa from the skillet and serve hot.
