Ingredients:
- 250 grams cluster beans (gawar or gawarphali), trimmed and chopped into small pieces
- 2 tablespoons oil (vegetable or mustard oil)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1-2 green chilies, finely chopped (adjust to taste)
- 1 medium onion, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala (optional)
- Salt to taste
- Fresh cilantro for garnish (optional)
- Lemon wedges for serving (optional)
Instructions:
- Prepare the Beans:
- Wash the cluster beans thoroughly.
- Trim the ends and cut them into small pieces (about 1-inch long).
- Cook the Beans:
- In a pan, heat the oil over medium heat.
- Add mustard seeds and cumin seeds. Once they start to splutter, add the finely chopped green chilies.
- Sauté for a minute, then add the chopped onions. Cook until the onions are translucent and golden brown.
- Add Spices:
- Add the turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well.
- Cook the Beans:
- Add the chopped cluster beans to the pan. Stir to coat the beans with the spices.
- Cover and cook on low heat for about 10-15 minutes, stirring occasionally. Check for doneness. The beans should be tender but still have a slight crunch. If needed, add a couple of tablespoons of water to help the cooking process.
- Finish the Dish:
- Once the beans are cooked and the spices are well-blended, sprinkle garam masala (if using) and mix well.
- Garnish with fresh cilantro if desired.
- Serve:
- Serve hot with chapati, paratha, or as a side dish with rice. Lemon wedges on the side can add a fresh tangy flavor.
