Ingredients:
- Leftover chapatis (Indian flatbread)
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 1 cup cabbage, thinly sliced
- 2 cloves garlic, minced
- 2 green chilies, sliced (optional)
- 2 tablespoons oil
- 2 tablespoons soy sauce
- 1 tablespoon vinegar
- 1 tablespoon tomato ketchup
- Salt to taste
- Black pepper to taste
- Chopped cilantro for garnish (optional)
Instructions:
- Take your leftover chapatis and cut them into thin strips, like noodles. Set aside.
- Heat oil in a pan or wok over medium-high heat. Add minced garlic and sliced green chilies (if using) and sauté for a minute until fragrant.
- Add thinly sliced onions and sauté until they turn translucent.
- Throw in the sliced bell pepper, julienned carrots, and thinly sliced cabbage. Stir-fry the vegetables for a couple of minutes until they start to soften but still have a bit of crunch.
- Now add the chapati strips to the pan. Toss everything together until the chapati strips are coated with the oil and mixed well with the vegetables.
- In a small bowl, mix together soy sauce, vinegar, and tomato ketchup. Pour this sauce mixture over the chapati noodles in the pan.
- Season with salt and black pepper to taste. Give everything a good mix to ensure the sauce is evenly distributed.
- Cook for another 2-3 minutes until everything is heated through and the chapati noodles have absorbed the flavors of the sauce.
- Remove from heat and transfer the chapati noodles to a serving dish.
- Garnish with chopped cilantro if desired, and serve hot.
