Cluster beans Fry

Ingredients:

  • 250g cluster beans (also known as guar beans or gavar)
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 2-3 cloves of garlic, minced
  • 1 small onion, finely chopped
  • 1 green chili, finely chopped (adjust according to spice preference)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust according to spice preference)
  • Salt to taste
  • Fresh cilantro leaves for garnish (optional)

Instructions:

  1. Wash the cluster beans thoroughly under running water. Trim the ends and chop them into bite-sized pieces.
  2. Heat vegetable oil in a large skillet or frying pan over medium heat.
  3. Once the oil is hot, add mustard seeds and cumin seeds. Let them splutter for a few seconds.
  4. Add minced garlic to the pan and sauté for a minute until it turns golden brown and fragrant.
  5. Add chopped onions and green chili to the pan. Sauté until the onions turn translucent.
  6. Now, add the chopped cluster beans to the pan. Stir well to coat the beans with the oil and spices.
  7. Sprinkle turmeric powder, red chili powder, and salt over the cluster beans. Mix everything thoroughly.
  8. Cover the pan with a lid and let the cluster beans cook for about 10-15 minutes, stirring occasionally. Cook until the beans are tender but still retain a slight crunch.
  9. Once the cluster beans are cooked through, remove the lid and let any excess moisture evaporate.
  10. Garnish with fresh cilantro leaves if desired, and serve hot as a side dish with rice or roti.
