Crisp yet tender cluster beans stir-fried to perfection with a tantalizing blend of spices, offering a delightful crunch and a burst of flavor in every mouthful.
Ingredients:
- 250g cluster beans (also known as guar beans or gavar)
- 2 tablespoons vegetable oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 2-3 cloves of garlic, minced
- 1 small onion, finely chopped
- 1 green chili, finely chopped (adjust according to spice preference)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust according to spice preference)
- Salt to taste
- Fresh cilantro leaves for garnish (optional)
Instructions:
- Wash the cluster beans thoroughly under running water. Trim the ends and chop them into bite-sized pieces.
- Heat vegetable oil in a large skillet or frying pan over medium heat.
- Once the oil is hot, add mustard seeds and cumin seeds. Let them splutter for a few seconds.
- Add minced garlic to the pan and sauté for a minute until it turns golden brown and fragrant.
- Add chopped onions and green chili to the pan. Sauté until the onions turn translucent.
- Now, add the chopped cluster beans to the pan. Stir well to coat the beans with the oil and spices.
- Sprinkle turmeric powder, red chili powder, and salt over the cluster beans. Mix everything thoroughly.
- Cover the pan with a lid and let the cluster beans cook for about 10-15 minutes, stirring occasionally. Cook until the beans are tender but still retain a slight crunch.
- Once the cluster beans are cooked through, remove the lid and let any excess moisture evaporate.
- Garnish with fresh cilantro leaves if desired, and serve hot as a side dish with rice or roti.
