Ingredients:
- 2 potatoes, peeled and diced
- 1 cup cauliflower florets
- 1 cup green peas
- 1 onion, finely chopped

Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Add minced garlic and grated ginger. Sauté for another minute until fragrant.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the spices are well incorporated.
- Add diced potatoes, cauliflower florets, and green peas to the pan. Mix well to coat the vegetables with the spice mixture.
- Add a splash of water, cover the pan, and let the vegetables cook until they are tender, stirring occasionally. If needed, add more water to prevent sticking.
- Once the vegetables are cooked through, remove the lid and cook for a few more minutes to let the gravy thicken slightly.
- Taste and adjust seasoning if necessary.
- Garnish with fresh cilantro leaves.
- Serve hot with rice or your favorite bread.
