  • 2 potatoes, peeled and diced
  • 1 cup cauliflower florets
  • 1 cup green peas
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons oil
  • Fresh cilantro leaves for garnish


  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Add minced garlic and grated ginger. Sauté for another minute until fragrant.
  4. Add chopped tomatoes and cook until they turn soft and mushy.
  5. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes until the spices are well incorporated.
  6. Add diced potatoes, cauliflower florets, and green peas to the pan. Mix well to coat the vegetables with the spice mixture.
  7. Add a splash of water, cover the pan, and let the vegetables cook until they are tender, stirring occasionally. If needed, add more water to prevent sticking.
  8. Once the vegetables are cooked through, remove the lid and cook for a few more minutes to let the gravy thicken slightly.
  9. Taste and adjust seasoning if necessary.
  10. Garnish with fresh cilantro leaves.
  11. Serve hot with rice or your favorite bread.
