  • 1 cup vermicelli (thin)
  • 1 liter milk
  • 1/2 cup sugar (adjust to taste)
  • A pinch of saffron threads
  • 1/4 cup mixed nuts (almonds, cashews, pistachios), chopped
  • 1/2 teaspoon cardamom powder
  • 2 tablespoons ghee (clarified butter)
  • Saffron strands for garnish (optional)


  1. Preparation: Soak saffron threads in 2 tablespoons of warm milk and set aside. Also, chop the nuts finely and set aside.
  2. Roasting Vermicelli: In a pan, heat ghee over medium heat. Add vermicelli and roast until it turns golden brown, stirring constantly to avoid burning. Once done, remove it from the pan and set aside.
  3. Preparing Kheer: In a heavy-bottomed pan, bring milk to a boil over medium heat. Keep stirring occasionally to prevent sticking.
  4. Adding Vermicelli: Once the milk comes to a boil, reduce the heat to low and add the roasted vermicelli to the milk. Let it cook on low heat until the vermicelli becomes soft and the milk thickens, stirring occasionally.
  5. Adding Sugar and Saffron: Add sugar and soaked saffron (along with the milk it was soaked in) to the kheer. Stir well until the sugar dissolves completely.
  6. Adding Nuts and Flavorings: Add chopped nuts and cardamom powder to the kheer. Stir well and let it simmer for another 5-7 minutes until the flavors meld together.
  7. Cooling and Serving: Once the kheer reaches your desired consistency, turn off the heat and let it cool slightly. Garnish with a few strands of saffron for an extra touch of luxury if desired.
  8. Serving: Serve the saffron silk delight (vermicelli kheer) warm or chilled as per your preference. Enjoy the richness and the delicate flavors!
