Ingredients:
- 1 cup vermicelli (semya)
- 2 tablespoons ghee or oil

- 1 tomato, finely chopped

- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
- Lemon wedges for serving (optional)
Instructions:
- Prepare Vermicelli:
- Heat a pan over medium heat and dry roast the vermicelli until it turns golden brown. Remove from the pan and set aside.
- Sauté Aromatics:
- In the same pan, heat ghee or oil over medium heat. Add chopped onions and green chili. Sauté until the onions turn translucent.
- Add Vegetables:
- Add grated carrot, green peas, and diced bell peppers to the pan. Stir and cook for a few minutes until the vegetables are slightly tender.
- Add Spices:
- Add ginger-garlic paste, turmeric powder, red chili powder, and garam masala to the pan. Mix well to coat the vegetables with the spices.
- Cook Vermicelli:
- Add the roasted vermicelli to the pan. Stir well to combine with the vegetables and spices.
- Pour in 2 cups of water and season with salt. Mix everything together.
- Simmer:
- Cover the pan and let the vermicelli cook over medium-low heat for about 5-7 minutes, or until the vermicelli is cooked through and all the water is absorbed. Stir occasionally to prevent sticking.
- Garnish and Serve:
- Once the vermicelli is cooked, remove the pan from heat.
- Garnish with freshly chopped coriander leaves.
- Serve hot with lemon wedges on the side, if desired.
