  • 1 cup vermicelli (semya)
  • 2 tablespoons ghee or oil
  • 1 onion, finely chopped
  • 1 green chili, finely chopped
  • 1 carrot, grated
  • 1/4 cup green peas (fresh or frozen)
  • 1/4 cup bell peppers (red, green, or yellow), diced
  • 1 tomato, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving (optional)


  1. Prepare Vermicelli:
  • Heat a pan over medium heat and dry roast the vermicelli until it turns golden brown. Remove from the pan and set aside.
  1. Sauté Aromatics:
  • In the same pan, heat ghee or oil over medium heat. Add chopped onions and green chili. Sauté until the onions turn translucent.
  1. Add Vegetables:
  • Add grated carrot, green peas, and diced bell peppers to the pan. Stir and cook for a few minutes until the vegetables are slightly tender.
  1. Add Spices:
  • Add ginger-garlic paste, turmeric powder, red chili powder, and garam masala to the pan. Mix well to coat the vegetables with the spices.
  1. Cook Vermicelli:
  • Add the roasted vermicelli to the pan. Stir well to combine with the vegetables and spices.
  • Pour in 2 cups of water and season with salt. Mix everything together.
  1. Simmer:
  • Cover the pan and let the vermicelli cook over medium-low heat for about 5-7 minutes, or until the vermicelli is cooked through and all the water is absorbed. Stir occasionally to prevent sticking.
  1. Garnish and Serve:
  • Once the vermicelli is cooked, remove the pan from heat.
  • Garnish with freshly chopped coriander leaves.
  • Serve hot with lemon wedges on the side, if desired.
