Ingredients:
- 2 cups moringa leaves (murunga keerai), washed and stems removed
- 1 tablespoon oil (coconut oil or vegetable oil)
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 onion, finely chopped
- 2 green chilies, slit (adjust to taste)
- 2 cloves garlic, minced
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- Salt to taste
- 1/4 cup grated coconut (optional, for garnish)
Instructions:
- Prepare the Moringa Leaves:
- Wash the moringa leaves thoroughly and remove them from the stems. Set aside.
- Heat the Oil:
- In a large pan or skillet, heat the oil over medium heat.
- Temper the Spices:
- Add the mustard seeds to the hot oil. Once they start to splutter, add the cumin seeds and let them sizzle for a few seconds.
- Sauté Aromatics:
- Add the finely chopped onions to the pan and sauté until they turn translucent.
- Add the minced garlic and slit green chilies. Sauté for another 1-2 minutes until the raw smell of garlic disappears.
- Add Spices:
- Stir in the turmeric powder and red chili powder (if using). Mix well.
- Cook the Moringa Leaves:
- Add the moringa leaves to the pan. Stir well to combine with the spices and onions.
- Cook for about 5-7 minutes, stirring occasionally, until the leaves are wilted and tender.
- Season and Garnish:
- Add salt to taste and mix well.
- If using, add the grated coconut and mix thoroughly. Cook for another 1-2 minutes.
- Serve:
- Transfer the Moringa Leaf Medley to a serving dish. Serve hot as a side dish with rice or roti.
