“Delightfully Green: Capsicum & Peas in a Flavorful Gravy!”
Ingredients:
- 2 large capsicums (bell peppers), diced
- 1 cup green peas (fresh or frozen)
- 2 onions, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, chopped (adjust according to your spice preference)
- 1-inch piece of ginger, grated
- 3-4 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons oil
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add grated ginger and minced garlic. Sauté for a minute until the raw smell disappears.
- Add chopped tomatoes and green chilies. Cook until the tomatoes turn soft and mushy.
- Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes until the spices are well combined.
- Add diced capsicums and green peas. Mix everything together until the capsicums are well coated with the spices.
- Add a little water (about 1/2 cup) to create a gravy consistency. Cover the pan and let it simmer for 10-15 minutes or until the capsicums are tender and the peas are cooked.
- Once the vegetables are cooked, add garam masala and mix well. Cook for another 2-3 minutes.
- Garnish with fresh coriander leaves.
- Serve hot with roti, naan, or rice.
