Emerald Delight Gravy

“Delightfully Green: Capsicum & Peas in a Flavorful Gravy!”


  • 2 large capsicums (bell peppers), diced
  • 1 cup green peas (fresh or frozen)
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, chopped (adjust according to your spice preference)
  • 1-inch piece of ginger, grated
  • 3-4 cloves of garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish


  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add grated ginger and minced garlic. Sauté for a minute until the raw smell disappears.
  4. Add chopped tomatoes and green chilies. Cook until the tomatoes turn soft and mushy.
  5. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for a couple of minutes until the spices are well combined.
  6. Add diced capsicums and green peas. Mix everything together until the capsicums are well coated with the spices.
  7. Add a little water (about 1/2 cup) to create a gravy consistency. Cover the pan and let it simmer for 10-15 minutes or until the capsicums are tender and the peas are cooked.
  8. Once the vegetables are cooked, add garam masala and mix well. Cook for another 2-3 minutes.
  9. Garnish with fresh coriander leaves.
  10. Serve hot with roti, naan, or rice.
