Banana Cake

  • 2 ripe bananas, mashed
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • Optional: chopped nuts, chocolate chips, or dried fruit for extra flavor


  1. Start by heating your oven to 350°F (175°C). Take a regular-sized loaf pan and grease it with a bit of butter or oil. If you want, you can also sprinkle a little flour to prevent sticking, or just line it with parchment paper.
  2. Now, in a big bowl, mix together the mashed bananas and melted butter until they’re all combined. Add in the sugar and mix it up well.
  3. Crack in the eggs, one at a time, and pour in the vanilla extract. Give it all a good stir until everything is smooth.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Slowly add the dry ingredients to the wet ingredients, stirring as you go. Pour in the milk a little at a time too, until everything is mixed together. Don’t mix too much; just enough to get everything combined.
