Egg Noodles

Quick and versatile, these egg noodles make for a perfect weeknight meal.

  • 8 ounces egg noodles (about half of a standard package)
  • 2 tablespoons vegetable oil or olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 carrots, peeled and thinly sliced
  • 1 bell pepper, thinly sliced
  • 2 cups shredded cooked chicken (optional)
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • Salt and pepper to taste
  • Chopped green onions or parsley for garnish (optional)

  1. Cook the egg noodles according to the package instructions. Drain and set aside.
  2. Heat the vegetable oil or olive oil in a large skillet or wok over medium heat.
  3. Add the minced garlic and chopped onion to the skillet. Cook until the onion becomes translucent and fragrant, about 2-3 minutes.
  4. Add the sliced carrots and bell pepper to the skillet. Cook for another 3-4 minutes, or until the vegetables are tender-crisp.
  5. If using, add the shredded cooked chicken to the skillet and stir to combine with the vegetables.
  6. Add the cooked egg noodles to the skillet. Pour the soy sauce and oyster sauce (if using) over the noodles and toss everything together until well combined.
  7. Cook for an additional 2-3 minutes, stirring frequently, to allow the flavors to meld and the noodles to heat through.
  8. Season with salt and pepper to taste. Adjust the seasoning as needed.
  9. Garnish with chopped green onions or parsley, if desired, before serving.
  10. Serve your delicious homemade egg noodles hot as a standalone meal or as a side dish with your favorite Asian-inspired dishes.
