Savory Taro Delight

“Indulge in Nature’s Bounty: A Symphony of Flavor with Our Savory Taro Delight!”

Ingredients:

  • 500g taro (colocassia), peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, diced
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, finely chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh cilantro leaves for garnish

Instructions:

  1. Heat the cooking oil in a pan over medium heat. Add the cumin seeds and let them splutter.
  2. Add the chopped onion and sauté until it turns golden brown.
  3. Add the minced garlic, grated ginger, and chopped green chili. Sauté for another 2-3 minutes until fragrant.
  4. Add the diced tomatoes to the pan and cook until they soften and turn pulpy.
  5. Now, add the diced taro (colocassia) to the pan along with turmeric powder, coriander powder, red chili powder, and salt to taste. Mix well to coat the taro pieces with the spices.
  6. Cover the pan and let the taro cook on medium-low heat until it becomes tender, stirring occasionally. This should take around 15-20 minutes. If the mixture becomes too dry, you can add a splash of water.
  7. Once the taro is cooked through and the gravy thickens, remove the pan from the heat.
  8. Garnish the savory taro delight with fresh cilantro leaves.
  9. Serve hot with rice or roti.
